WINEMAKING
Skin contact maceration – low temperature fermentation, with a small part of wine aging in new oak barrels. Between 3 and 6 months of aging in new oak barrels with stirring.
VITICULTURE
Low yields, hand tending, careful selection, and minimal interference in the natural ripening of the grapes. Night picking of the grapes.
TASTING NOTES
Bright, pale yellow color. Fine nose with lots of fresh white and tropical fruits (pear, quince, pineapple, passion fruit) combined with delicate white flower notes. Well-balanced, the palate is fresh and lively ending with a long fruity and floral finish.
PAIRING
Seafood, fish dishes, sushi or as an aperitif. Best served between 10°C and 12°C / 50°F to 54°F.
