WINEMAKING

De-stalked grapes – daily rack and return – aging on lees with controlled oxidation.

 

TASTING NOTE

Intense purple red colour. Flowers hints (violet), then an explosion of black fruit (black cherry, blackcurrant) combined with black pepper hints. Marked attack that gives away to a nice evolution on the fruit in a consistent set. A finish raised by the spicy notes.

 

PAIRING

Cheese, charcuterie, roast meat and Mediterranean dishes – Best at 16°C.
