WINEMAKING
Traditional vinification in thermo-regulated stainless steel tanks of de-stemmed pinot noir bunches. The long vatting period of 3 weeks with pre-fermentation cold maceration allows the wine to develop aromas and complexity. Finally, the wine is aged in oak barrels for 18 months for complexity and structure.
TASTING NOTES
Brilliant, deep red color. Dominated by notes of ripe red fruits. Delicately oaked on the palate with notes of cherry and sweet spices. A long finish with silky tannins.
PAIRING
Serve with cheeses, red meats, or small feathered game. Best served at 18°C / 64°F. Aging potential: 12 to 14 years.
