WINEMAKING

Full malolactic fermentation, aging on lees with a minimum of 5 years in the cellar, dosage less than 7 g/L.
 

TASTING NOTES

Generous fizz and bright golden color. Fresh fruity attack which develops confit fruit, fruit paste, apricot, and delicate confectionery qualities. Firm on the palate with structure and a nice, long finish.
 

PAIRING

As an aperitif, with sea bass carpaccio, parmesan, or foie gras. Best served at 9°C and 12°C / 48°F and 54°F.
